The name Violagro was born from this legacy.
The name blends Violetta - our mom's name the heart and matriarch of this story - with agro, Agros the Greek root for “field” or “land.”
It is more than a brand; it is a celebration of where we come from and what we carry forward.
Each bottle of Violagro olive oil honors the grove we love, and the timeless connection between earth and nourishment.

Our ancestors believed the land had a rhythm of its own and taught our family to respect it, not just as a source of sustenance, but as a partner in life. Every harvest was a ritual, every drop of oil a testament to patience, care, and soul. Violagro is not mass-produced. It is hand-harvested, cold-pressed, and deeply personal—crafted with the same integrity and passion Violetta instilled in her family. A good extra virgin olive oil has the following three characteristics:

Fruity

The "fruity of olive oil" is the aroma or taste, which reminds us of freshly cut, without defects, healthy unripe or ripe olives. When we say "fruity", we mean the nice taste or aroma of the fruit (fruit) of the olive and our mind should not go to some fruit.

Bitter

Bitter, then, is exactly the feeling of bitterness that we can feel in our mouth when we try an olive oil which is usually made from relatively "unripe" olives, ie green-yellow-purple.

Spicy

It is the burning sensation, the "spicy" that we will feel when tasting a fresh olive oil from "unripe" olives.
