IN HONOR OF THE GUARDIAN OF GREEK TRADITION

Guardians of Tradition: The Evzones and the Story of the Olive Tree.

Evzones stand as living symbols of Greece’s enduring spirit and history.
These elite ceremonial guards, with their meticulously crafted uniforms and precise movements, represent more than just a military tradition; they embody the resilience and pride of a nation.
Similarly, the olive tree, a timeless emblem of peace and prosperity, shares a storied history deeply intertwined with Greek culture and tradition.
Comparing the Evzones with the olive tree reveals a profound connection between Greece’s guardians and its natural heritage, both standing as testaments to endurance, tradition, and the pursuit of peace.

The uniform of the Evzones is one of the most iconic and symbolic in Greece, reflecting centuries of history, bravery, and cultural pride. Every element of their attire has deep historical roots:

Foustanella: This white pleated kilt-like garment has 400 pleats, symbolizing the 400 years of occupation. It moves gracefully as they march, adding to the ceremonial beauty of their role.

Farion:A red fez with a long black silk tassel, representing the continuity of Greek heritage.

Ypodetes & Fermeli: The white shirt (ypodetes) with wide, flowing sleeves is worn under a black or navy blue wool vest (fermeli), beautifully hand-embroidered with intricate designs.

Tsarouchia: The famous red leather shoes with large black pom-poms, each weighing around 3 kilograms. The soles are often studded with metal nails, creating a distinctive loud sound during their synchronized steps.

White woolen stockings and black garters complete the uniform, emphasizing the traditional attire of 19th-century Greek fighters.
characteristics

A good extra virgin olive oil has the following three characteristics:

Fruity

The "fruity of olive oil" is the aroma or taste, which reminds us of freshly cut, without defects, healthy unripe or ripe olives. When we say "fruity", we mean the nice taste or aroma of the fruit (fruit) of the olive and our mind should not go to some fruit.

Bitter

Bitter, then, is exactly the feeling of bitterness that we can feel in our mouth when we try an olive oil which is usually made from relatively "unripe" olives, ie green-yellow-purple.

Spicy

It is the burning sensation, the "spicy" that we will feel when tasting a fresh olive oil from "unripe" olives.
